Peaks and Pints Beer Flight: Varietal Beer Company

Share

In April 2018, after homebrewing and working in professional breweries and hop farms in the Yakima Valley, and two years of raising money and building, Chris Baum, John Cope, Chad Roberts, David Paulson, and Karl Vanevenhoven opened Varietal Beer Co. in the Port of Sunnyside between Yakima and the Tri-Cities in Eastern Washington. The ownership all had a variety of dreams and life goals, but their Venn diagram centered on owning a brewery in the Yakima Valley. After earning the Enterprise Challenge held annually by the Yakima County Development Association and the Kittitas County Chamber of Commerce, Varietal became a

Peaks and Pints Beer Flight: Repeal Day

Share

Flash back to the Roaring Twenties, when America was amid Prohibition: Booze was banned, stealthy speakeasies adorned Tacoma, and the Paramount Theatre sat in Tacoma’s Proctor District, which in 2016 became Peaks & Pints bottle shop, taproom, and eatery. Prohibition, the law that prohibited the sale, manufacture, and transportation of alcohol in the United States, was ratified as the 18th Amendment on Jan. 16, 1919, and went into effect on Jan. 16, 1920. Dec. 5, 1933, passage of the 21st Amendment, brought an end to Prohibition. You might think there are already enough reasons to party in December. You might

Peaks and Pints Beer Flight: Bourbon County Variants

Share

Goose Island Beer Company first brewed their bourbon barrel-aged imperial stout in 1992 to commemorate the 1,000th batch of beer made at the company’s Clybourn brewpub. Ever since, Bourbon County Stout has grown into a highly anticipated annual release, dropping on Black Friday. When Goose Island concocted its first Bourbon County Brand Stout, the practice of barrel aging beer took an intoxicating turn. After three months inside used bourbon distillery barrels, the brew had a complex oak character from the wood and rich flavors from lingering whiskey — characteristics that made the Bourbon County Brand Stout an instant hit. Peaks and Pints Beer Flight: Christmas IPAs

Share

Essentially, Christmas beer isn’t a style; it’s a tradition. Unlike pilsners or bocks, which have specific criteria, Christmas beer has no confines. Unless, of course, you refer to the guidelines from the Beer Judge Certification Program, which states its aroma should be “reminiscent of Christmas cookies,” appearance of amber to dark brown, and must taste “rich and malty.” The guidelines state “spices are required.” However, BJCP cites some brands as leading examples of Christmas beers that contain no spices. So now, how do we define Christmas beer? Simple — it’s a beer that was brewed as a gift. It may

Peaks and Pints Beer Flight: Doppelbock Duel

Share

Between the 14th and 17th centuries, the Northern German city of Einbeck was a brewing center and popular exporter of beer, but the Thirty Years War and a series of unfortunate brewery fires effectively ended the city’s dominance. The Einbeck style of beer was later recreated by the monks of Munich’s St. Francis of Paula church in the 17th century where Bavarian speakers corrupted the name “Einbeck,” leading to the modern “bock.” The monks fasted during the Lenten season, finding their nourishment from a stronger, heartier bock they referred to as “liquid bread.” The monks called this brew Salvator, Latin

Peaks and Pints Apple Cider Day Flight

When English colonists first arrived in North America, they enthusiastically embraced the wide range of wild fruits they found growing, from grapes to berries. Unlike back in England, however, edible apples were tough to find. The colonists quickly got to work on rectifying this situation, and as early as 1623 they were planting cider apples in New England from imported seeds. Apples flourished in the fertile soil and friendly climate, and soon everybody drank cider until the Industrial Revolution. John Adams began his days with a draft of hard cider. Plus, in the absence of money, hard cider became as

Peaks and Pints Beer Flight: Coffee

File Under: Things that get you buzzed. Like many folks, you might be a slave to chemical rituals. Caffeine in the morning, and booze at night. In the name of efficiency, Peaks & Pints recommends combining the two at every opportunity. The pairing of roasted barley with roasted coffee is so natural; it’s almost surprising these stouts and porters didn’t catch on sooner. But coffee beers didn’t really start to percolate until the mid-’90s. But almost no one argues with the inspiration — porters and stouts tend to rely on a roasty malt bill already, conjuring subtle coffee aromatics and

Peaks and Pints Beer Flight: Dark Beers

Share

What makes a dark beer dark? It all comes down to the malts. Though all beer relies on malts (cereal grains that have been allowed to germinate, then dried to halt the germination process), dark beers are unique in their use of black and dark malts. These grains are heavily roasted to achieve the characteristic color as well as the caramelized, toasty flavors we love. The blanket term “dark beer” encompasses everything from classic styles like schwarzbier (a dark German lager) to the relatively new and trendy black IPAs. The most familiar dark beers, however, are generally billed as either

Yes, pines filter countless pounds of CO2 though all those sun-dappled branches to make us healthier, And happier. Because of pine trees. We mean, clearly. Peaks and Pints Beer Flight: Dark Side of the Lager

When most people think of lagers they think of pale, clear lagers with snow-white heads and a crisp, light flavor. But that wasn’t always the case. For centuries, dark lager dominated the scene in Central Europe until methods for kilning paler malts came along and the introduction of amber lagers such as Vienna lager and Märzen hit the scene. Eventually, in 1842, Joseph Groll brewed a beer in Plzen, Czech Republic that was golden with that thick snow-white foam. Pilsner was born and the world hasn’t looked back. Today, Peaks and Pints takes a step back into pre-pilsner history to
