Fresh is best, they say, and beer is no exception. Brewing with fresh ingredients is important for flavor and quality, and hops are among the most celebrated — especially in the Pacific Northwest where most of the nation’s hops are grown. The hop harvest is like Christmas in August, though the harvest extended well into September as fresh hop beers are still arriving to Peaks & Pints craft beer bar, bottle shop and restaurant in Tacoma’s Proctor District. Typically, hops are harvested, dried, and converted into pellets that’ll stay usable for years. Brewers are on the clock with fresh hops, though, which are available only once a year, and need to get thrown into the brew immediately. Like cooking with fresh versus dry spices, the fresh hops have higher amounts of water, so you need more of them than the dry stuff. Wet hop beers tend to taste less bitter than dried, with a fresher, more herbal flavor profile. Today, marks our final Fresh Hop Friday and fresh hop beer flight. Mirage Tun State

6% ABV

Mirage Beer‘s fresh hop IPA collaboration with Good Society Brewing was a fresh hop IPA finalist two weeks ago at the Fresh Hop Ale Festival IPA in Yakima. Brewed with fresh Citra hops from Carpenter Ranches, and dry-hopped with fresh Idaho 7 hops, also courtesy Carpenter Ranches, this hazy fresh hop IPA is highly rated on Untappd.

Postdoc Freshious

6.8% ABV

“When in the darkest depths of Mordor make sure to keep your Freshious with you,” states Postdoc Brewing Freshious hype. “Perfect to go with your elevenses, your Freshious has satisfying and abundant fresh hop aromas. Light, crisp, and a bit fruity, your Freshious will keep you company on your quest for the best beer, the one to rule them all.” Feshious is brewed with wet Citra hops for bright citrus balanced with caramel malt.

Here Today Electric Sculpture Fresh West Coast IPA

7.1% ABV

Here Today Brewery‘s Electric Sculpture Fresh West Coast IPA is a contemporary, fresh hop IPA brewed with wet Citra cones from CLS Farms for ester citrus, lemon, yuzu, grapefruit, light dankness and herbal hop notes added to a light caramel malt base.

Old Stove Fresh Hop Azacca Cold IPA

7.2% ABV

Old Stove’s final fresh hop beer of the year, loaded with 400 pounds of wet Azacca hops from Roy Farms. This cold IPA is fermented with Old Stove’s house lager strain, making for a clean, crisp and balanced fresh hop IPA with tropical notes of mango and papaya.

Lumberbeard Citra Shred

7.5% ABV

Fresh hop collaboration with Whistle Punk Brewing using freshly harvested, shredded Citra cones, Lumberbeard Brewing‘s West Coast IPA offers notes of grapefruit, lemon-lime, and watermelon. You won’t find a shred of difficulty drinking this tasty freshie.
