It’s going to be a beer-filled fall in the South Sound, and the one of the happiest splashes, at least to us, will be the opening of Peaks and Pints bottle shop, taproom and eatery in Tacoma’s Proctor neighborhood. We’re taking over the former Paramount Theater, which opened in 1923 at 3816 N. 26th St. We found the original theater seats underneath the 1940s wood flooring that a five-and-dime store installed after it inhabited the same space. The city of Tacoma forced us to retrofit the building with steel — a lengthy process — so the old brick and curved ceiling has been replaced with wood and a big-ass craft beer and cider cooler. All said and done, from the dream to Letter of Intent to a Seattle company grabbing the building from us for six weeks to the signing of the lease in August 2015 to the wait for the building owner’s construction crew to move Julie’s Hair Care to make room for our atrium then deliver us a “vanilla shell,” Peaks and Pint’s 18-month journey to open should end in mid-September.
