In 2015, homebrewer and Doctor of Physical Therapy Sean Buchan, homebrewer and microbiologist Chris Washenberger and financier Dan McGuire opened Cerebral Brewing in Denver’s Congress Park neighborhood along the city’s famed Colfax Avenue. The three met at Washenberger’s Denver homebrew club where the idea “to combine scientific methodology with an artistic viewpoint to create extremely drinkable beers spanning a broad spectrum of styles” became a reality. With their scientific background, Buchan and Washenberger want to make quality one of their hallmarks — and idea that carries through in their name. From its hop-bombs to its luscious stouts and sophisticated saisons, Cerebral has a menu that has been gathering national accolades from magazines, fellow breweries, and craft-beer fans. But Cerebral and head brewer Buchan are probably best known for their hazy, hoppy offerings. Today, Peaks & Pints presents an in-house flight of Cerebral beer — a flight we’re calling Peaks and Pints Beer Flight: Cerebral Brewing.

Cerebral Standard Practice
4.8% ABV
Cerebral’s take on a traditional helles brewed with imported German malt and hopped with Hallertau Hersbrucker before receiving their signature lager treatment — resting in foeders for several weeks for a softer mouthfeel. Expect notes of biscuit, lemongrass, and honeysuckle.
Cerebral Rare Trait
6.4% ABV
Cerebral’s flagship hazy IPA, Rare Trait, “is our crown jewel, our mission statement, a proverbial shot over the bow, our raison d’etre,” states Rare Trait hype. Brewed with Citra, El Dorado, and Mosaic hops, expect note of tangerine, mango, and candied peach, but riding a restrained bitterness that has defined Cerebral’s style since day one.
Cerebral Luminous Glow
7% ABV
Located in the heart of the Aurora Arts District, just four miles down Colfax from their original Congress Park location, nestled in between their 18,000-square-foot brewhouse and expansive barrel collection, Cerebral’s cozy Aurora Arts taproom offers an up-close-and-personal Cerebral experience Friday through Sunday with Luminous Glow on tap. Brewed with Nectaron, Citra, and Strata hops, plus vanilla, this hazy IPA has notes of Orange Dreamsicle, Pineapple Fanta, and Pina Colada.
Cerebral Cloud Types
8% ABV
Cerebral’s Cloud Types imperial hazy IPA is brewed with Motueka, HBC 1019, and Southern Cross hops for notes of Banana Daiquiri, Sierra Mist, and fresh honeydew.
