Peaks and Pints Beer Flight: Holy Mountain

Holy Mountain Cascadian Midsummer

4.9% ABV

Cascadian Midsummer is a hoppy lager brewed in collaboration with the Hawk Collective/Cascadian Midsummer Festival. Brewed using exclusively ingredients from the Cascadia region: Pilsner malt grown at Cornerstone Ranches in Enterprise, Oregon; Spelt malt grown at Moon Family Farms in Horse Heaven, Washington; high-oil Cascade hops from Segal Hop Ranches in Grandview, Washington — the hops saw dry hop as well as kettle time. Holy Mountain fermented it with their favorite lager yeast and conditioned cold for 6 weeks for an easy-drinking, floral nosed crisp lager with moderated hoppiness.

Holy Mountain Harmony of the Sun (2023) – Sorachi Ace and Nelson

4.9% ABV

Harmony of the Sun saison is brewed with Genie Pils and Triticale Pale malts from Linc Malt. Lightly hopped in the kettle with Sorachi Ace, it’s fermented in one of their foudres with a farmhouse yeast originating in Lithuania, and then dry hopped in stainless with Nelson Sauvin for an apricot nose and stone fruit flavors.

Holy Mountain Cathedral

5.2% ABV

Cathedral is an Americanized nod to a traditional German-style Kölsch brewed with German Pilsner malt, wheat malt, and hopped with Hallertau Blanc and Nelson Sauvin. On the nose, expect mineral, honey, bread, and sourdough. The first sip reveals caramel and noble spices with a lingering light bitterness.

Holy Mountain Baptized in Blood

7% ABV

Baptized In Blood is brewed using a blend of 2-row and Pilsner malts with some flaked barley, flaked rye, and malted oats. It’s hopped in the kettle with Strata and Comet, after fermentation with one of Holy Mountain’s favorite yeast strains they dry hop it with more Strata and Comet plus a kiss of Citra Cryo to make all the juicy citrus, bitter grapefruit, and hoppy earthiness flavors blend together.

Holy Mountain The Water & The Well

7.5% ABV

The Water & The Well is brewed with Canadian 2-row malt, German Pilsner malt, flaked oats, and British malted oats, heavy late hop additions of Citra, Simcoe, and Mosaic, and fermented with one of their favorite yeast strains that originated in London. After fermentation, it’s dry hopped with large amounts of Citra, Simcoe, and Mosaic. If you drink from the Well you’ll smell tropical fruit similar to mango and pineapple in a blender. It’s fruity in flavor, too, with strong bitterness and drying in the finish.
