Peaks and Pints Beer Flight: Perennial Artisan Ales

Perennial Artisan Ales had been a long time coming for brewmaster Phil Wymore, who hailed from Weston, a town northwest of Kansas City. Though he was new to St. Louis, Wymore wasn’t a stranger to beer. He planted his roots working as an assistant for the now closed Grindstone Brewery in Columbia. After graduating from Mizzou, he moved north to Chicago to work for Goose Island, studied brewing at the Siebel Institute and later brewed for Windy City craft brewery Half Acre Beer Co. With all those years of experience under his belt, he began developing his own vision — and chose St. Louis to pursue it. Established in September 2011, Perennial is a small-batch craft brewery based in St. Louis, focusing on seasonal beers with locally sourced ingredients, farmhouse releases and barrel-aged varieties. Perennial Dèpaysement

4.4% ABV

A new foeder aged saison built upon a sturdy base of Pilsner malt, malted wheat, and spelt. Primarily fermented in stainless before being transferred over into a large foeder with a house mixed culture, and then aged for 11 months before being naturally carbonated in cans and kegs. Expect a delicious, funky, tart, and mildly sweet saison.

Perennial Saison de Lis

5% ABV

Conceptualized by the creative team Perennial, Saison de Lis combines the natural floral notes of a classic Belgian-style saison with the enticing aromas from chamomile flowers. Apples and yeast driven esters arise from the glass and bring focus while the faint tealeaf and pollen high notes lend interesting complexities. Saison de Lis’ fundamentals are crisp with baked apple and ripe pear comparisons that linger with a hint of citrus and grass. The lasting qualities are comforting as they hold a welcoming sensation like that of sunbeams catching the petals of wild flowers or the blades of hay among the countryside. Seriously.

Perennial Fourth Orbit

5.3% ABV

Perennial’s Fourth Orbit Belgian-style saison is brewed with Brettanomyces and then aged on enough peaches to subdue the funk from Brett.

Perennial Ollie Ollie Oxen Free

4.5% ABV

OK, OK, Perennial also brews IPAs. Their Ollie Ollie Oxen Free session IPA, brewed with Olive + Oak restaurant and bar, is brewed with Centennial, Falconer’s Flight, and Mosaic hops. The beer is named after Olive + Oak owners Jenn and Mark Hinkle’s son, Ollie. Ollie was born with a congenital heart defect and passed away not long after his first birthday. A portion of the proceeds goes to the Ollie Hinkle Heart Foundation.

Perennial Perpetual Waves

6% ABV

Their Perpetual Waves is a West Coast style IPA with bursts of light citrus and a dry pine finish. Inspired by the ocean and the relentless energy of the surf — which is a long way from Perennial’s hometown of St. Louis, Missouri — this brew captures the essence of the coast in every sip.
