Structures Brewing founder James Alexander wanted to open a second location since opening in 2015 but kept his head down brewing Belgian farmhouse and mixed fermentation beers and hazy IPAs. During the pandemic, Chuckanut Brewery and pFriem Family Brewers head brewer Bryan Cardwell and longtime friend of Structures joined the ownership expanding their beer portfolio. In March 2023, Structures finally opened their second location in the former Chuckanut spot, which was taken down to the studs. It’s beautiful with two massive glass garage doors in that overlook the water, built a wrap-around patio, beautiful front door and added an entire draft system and bar to the back patio. Since another round of Structures beer landed at Peaks & Pints, we decided to feature another in-house flight of the Bellingham brewery’s delicious beer. Stop by our craft beer and cider bar, bottle shop and restaurant in Tacoma’s Proctor District and grab Peaks and Pints Beer Flight: Structures.
Peaks and Pints Beer Flight: Structures
Structures Plainsman
4.9% ABV
Structures co-owner Bryan Cardwell attended a six-month intensive course at the renown Versuchs-und Lehranstalt für Brauerei, or VLB, in Berlin, Germany, studying lagers with the best — in addition to everything he learned from Will Kemper, Josh Pfriem, and now James Alexander. He knows his way around a lager, indeed. Structures’ rustic American light lager is brewed with heirloom corn and Saaz hops for crisp, crushable, bready lager with hints of grassy hops and a light amount of bitterness. It’s currently the number 16 rated American Light Lager in the world on Untappd, yo.
Structures Junior
4.5% ABV
Long before contemporary sluggers thrilled us with their prodigious power during All-Star Home Run Derby competitions, one name towered above the rest in the annals of Derby lore: Ken Griffey Jr. No one has won as many Derby titles as Griffey’s three. The combination of his immaculate swing, his ability to deliver under pressure, his status as the most exciting player in the game and, of course, that backwards cap, made him a Derby legend the likes of which we haven’t seen since. Structures brewed a beer in Griffey’s honor, “Junior.” The hazy pale ale is brewed with Simcoe, Amarillo, and Citra for stone fruit and citrus.
Structures Vivid
6.8% ABV
Vivid is Structures’ OG West Coast IPA with aromas of grapefruit citrus, a firm bitterness and a soft, yet bright full-bodied mouthfeel that leaves you with that familiar West Coast dry hopped profile from Citra, Mosaic, and Cashmere asserting a hop forward balanced dry finish.
Structures CITRA FVZZ, DDH
7.2% ABV
Structures had fun meshing old recipes together and came up with their flagship IPA Fuzz in December 2016. Originally brewed with oats and hopped intensely with Amarillo, El Dorado, and Cashmere hops, this version is double dry hopped exclusively with Citra hops for tropical papaya, guava, and Cara Cara orange with a big pillowy body.
Structures Liars
11.5% ABV
Liars is an imperial pastry stout brewed with Freak Folk Bier in Waterbury, Vermont. They brewed Liars with a decadent and complex malt bill, and conditioned on Madagascar and Mexican vanilla, heaps of ladyfingers, Tanzanian and Ecuadorian cacao, toasted, and cream cheese (yes, that’s the truth).
