You have, no doubt, read enough Mirage Beer flight write-ups to know founder Mike Dempster opened the Seattle South Park neighborhood in November 2017. You know he earned his chops brewing at Greenpoint Beer Works in Brooklyn, Buoy Beer Co. in Astoria, and Wingman Brewers in Tacoma where he helped Peaks & Pints brew a recreation of Bert Grant’s Perfect Porter called Perfect Proctor Porter for our opening day, Nov. 1 2016. You might have even noticed that while he stills brews amazing spontaneously fermented saisons and sours, he’s honed-in the hazy IPAs and lagers. What you might not know is Dempster is also a perfectionist and workaholic. He writes beer recipes down to the molecules and meticulously monitors his beers until they arrive in coolers and on tap lines. He also works 16-hour days logging hundreds of miles a week between him and his father, gathering ingredients, canning and moving product and brewing. He’s not afraid to throw ungodly amounts of hops at a hazy. He’s also not afraid to share his hopes and fears. Mirage Airships
4.5% ABV
Airships New England-style pale ale is brewed and dry-hopped with Nelson Sauvin for citrus and bitter light beer.
Mirage Thief Kid
4.7% ABV
Thief Kid hazy pale is dry-hopped with Eureka, Aramis, and Calypso hops for a light-bodied but sharp pale with pine notes.
Mirage The Crossing
6.5% ABV
A New England-style IPA dry-hopped with Citra, Talus, Sultana cryo and X10416 — Hopsteiner’s new hop born from a cross of Bravo, Serebrianka, and Wye Target hops. The X10416 hop has a high oil content giving pungent aroma characteristics of orange, citrus, pine, mint, and tropical fruits, followed by flavors of tropical fruits, pine and some floral notes.
Mirage Case For A Rookie Hangman
6.7% ABV
Case For A Rookie Hangman is a New England Style IPA hopped with three forms of Citra, starting with Incognito flowable hops in the whirlpool, and later, a double-dry-hop of both standard T90 pellets and Lupomax cryo-pellets for juicy, grassy, citrus-y goodness.
Mirage Letterlocking
7.1% ABV
We’re not sure if there any Galaxy hops left in the world after Mirage dump them into their Letterlocking England-style IPA, which was canned yesterday. The super hazy, super tropical IPA brewed with Hüll Melon and Citra Incognito in the boil and whirlpool, and later double dry hopped with Galaxy and more Hüll Melon offers citrus and melon flavors.
