Chris Baum, John Cope, Chad Roberts, David Paulson, and Karl Vanevenhoven opened Varietal Beer Co. in April 2018 in the Port of Sunnyside between Yakima and the Tri-Cities in Eastern Washington. The ownership all had a variety of dreams and life goals, but their Venn diagram centered on owning a brewery in the Yakima Valley. After earning the Enterprise Challenge held annually by the Yakima County Development Association and the Kittitas County Chamber of Commerce, Varietal became a thing. They knew they couldn’t launch with their dream wild ales, so they add a variety of other beer styles to get rolling. The clean, hoppy beers turned heads, including ours. Varietal Tablemaker
6.5% ABV, Campfire Crowler
This American wild ale is a blend of golden sour ale that was aged in wine barrels for 2 years, then re-fermented on sweet and tart cherries for several months. The final beer is bright and wild with complex cherry spice.
Varietal Returning Sun Blood Orange IPA
6.2% ABV, can

Their Returning Sun Blood Orange IPA is their most requested rebrew this year, featuring blood orange purée during fermentation, then a dry hop of blood orange zest, Comet, and Cashmere hops for a lovely blood orange flavor with just the slightest hoppy finish.
Varietal Mithril Clouds (Batch 3)
6.7% ABV, can
This hazy IPA is brewed with a simple malt base, plus a fermentation dry hop of Pahto (HBC 682) and double dry hop of Mosaic. Expect a juicy punch of lime and tropical fruit overlaid with some dank pipeweed from their favorite shire.
Varietal JOY DIPA
8.1% ABV, can
Varietal brews a version of JOY annually with their friends from Bron Yr Aur Brewing in Naches, Washington, in memory of their friend Joy Peterson. This year JOY is a double IPA brewed with a lot of 2-row malt, then heavily hopped with Comet (a through-line for the series), Ernest, Citra, and Triumph hops for orange and papaya flavors with a zip to enhance the juicy flavor.
