Proctor & Pints: Gardensphere Jubelale Pre-funk

It’s Christmas-pre-funk-time! It’s that time of the year when the weather gets colder and the people get warmer (generally), and when red and green become the most popular colors around town (and on ladies’ fingernails). The radio stations start playing that jolly Christmas music, and the cheesy — yet equally classic — holiday movies are on repeat on your TV guide. But soon we’ll be dragging trees, branches, and even holiday plants with notes of mild toxicity. And nothing is more Christmas-pre-funk-time-y than ordering a Christmas tree with Deschutes Jubelale in hand.

Gardensphere, just north of the Proctor Bridge in Tacoma’s Proctor District, will have a wide variety of Christmas tree species in a variety of sizes beginning Nov. 27. Gardensphere took root in 2007, starting first as a landscape consulting company before growing to include a thriving nursery. Today, founders and brothers Gabe and Travis Valbert offer an all-encompassing selection of services for both novice and seasoned gardeners, ranging from in-store plant help to landscape design services to Christmas tree delivery including stand set-up. The toy store for green thumbs will, indeed, deliver the tree for free because the ownership and staff are ridiculously friendly.

Gardensphere is taking Christmas tree orders now via their website. This is the point where the “Pint” in this neighborhood series name comes into play. Beer Pairing

Deschutes Brewery’s former head brewer John Harris originally brewed Jubelale for Christmas and modeled it after an English strong ale or winter warmer. He brewed that first batch on Oct. 26, 1988, and according to the brewing log, it contained pale malt, caramel malt, chocolate malt, and dextrin malt, and the hops used were Galena, Cascade, “Wills” (assuming Willamette), and Tettnanger in the hop back. Starting gravity was 1.065, and the resulting alcohol was 6.25 percent by volume. The Bend, Oregon brewery has been producing the robust and malty but approachable Jubelale winter festive ale every year since. Its spicy-malt flavor, cocoa, dried fruit, and toffee notes ignite cozy warmth — especially since it’s on nitro for added creaminess.
